Creamy Chicken Taquitos

1/3 cup cream cheese
1/4 cup red or green salsa
1 Tbsp fresh lime juice
1/2 tsp cumin
1 tsp chili powder
2 Tbsp sliced green onions

1/2 tsp onion powder 
1/4 tsp garlic 
3 Tbsp chopped cilantro 
2 cups shredded chicken 
1 cup grated Pepper Jack cheese 
small corn tortillas
Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray. Heat cream cheese in the microwave for about 20-30 seconds to soften. Add green salsa, lime juice, cumin, chili powder, onion powder and garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

Work with a few tortillas at a time. Place between damp paper towels and heat in the microwave for 20-30 seconds until they are soft enough to roll without cracking. Place 2-3 Tbsp chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges; roll it up tightly. Place seam side down on the baking sheet. Place all taquitos on the baking sheet and make sure they are not touching each other. Spray tops lightly with cooking spray or an oil mister and sprinkle Kosher salt on top.

Place pan in oven and bake for 15-20 minutes or until crisp and ends are golden brown. Dip in salsa, sour cream, guacamole, or dressing. Serve with a side of Black Beans and a simple green salad with creamy Lime-Cilantro Dressing.
