Romaine Salad with Poppy Seed Dressing

Salad
2 heads of romaine lettuce, chopped
1/2 cup Swiss or Parmesan cheese
6-8 strips bacon, cooked, crumbled
1/2 - 1 cup Craisins or cherries

Candied Nuts
1 cup chopped walnuts or pecans
1/4 cup sugar
1 Tbsp butter
1 /4 tsp ea salt, cayenne pepper

Poppy Seed Vinaigrette Dressing
1/3 cup sugar
1/3 cup white vinegar
1/3 cup vegetable oil
2 Tbsp yellow mustard
3/4 tsp salt
1 tsp poppy seeds
Poppy Seed Vinaigrette Dressing Combine all ingredients except the poppy seeds in a blender and process until combined. Add the poppy seeds and give it another whirl to combine. Pour in a jar and keep in the refrigerator until ready to serve.

Candied Nuts In a 10-inch skillet, combine all ingredients. Heat over medium, stirring constantly until sugar and butter melt and coat the nuts, 3-5 minutes. Immediately scrape nuts onto wax paper or parchment and separate carefully into pieces to cool. Break into smaller pieces with a mallet, if needed.

Salad In a large bowl, toss lettuce, cheese, bacon, dried fruit, and cooled nuts. Pour part of dressing over top and toss to combine. Add more dressing, if needed. Serve immediately.
