No Bake Chocolate Oatmeal Coconut Cookies

2 cups sugar
1/2 cup milk
1/2 cup butter
1/3 cup cocoa powder
1 cup peanut butter
1 Tbsp vanilla
3/4 tsp cinnamon
3 cups quick-cooking oats
1/2 cup shredded coconut
1 cup coarsely chopped almonds (toasted, optional) [from MKC]
In saucepan, combine sugar, milk, and butter. Bring to a boil, then reduce heat and cook for 1 minute. Remove from heat and add cocoa powder, peanut butter, vanilla, and cinnamon. Stir well. 

Mix in oats, coconut, and almonds. Drop by spoonfuls onto baking sheets lined with waxed paper. Cool completely. Makes about 3 dozen cookies.
