Cheese Sauce

1 cup chicken broth
1/4 tsp cayenne pepper
1 Tbsp cornstarch
1/2 tsp Dijon mustard
1 oz cream cheese
1 cup shredded Cheddar cheese
In a small saucepan, combine 3/4 cup chicken broth and cayenne pepper. Bring to a boil. While the broth is heating, whisk together the remaining 1/4 cup broth, cornstarch, and Dijon mustard. When it comes to a boil, add the cornstarch mixture and boil about 1 minute or until thickened. Turn heat to low and whisk in the cream cheese. When totally smooth, whisk in the Cheddar cheese.

Drizzle over steamed or roasted vegetables, noodles, cooked pasta, baked potatoes, or use as a dip for chips or fondue. Makes 4-6 servings.
