Chili Mac and Cheese

1 large onion, finely diced
2 Tbsp chili powder
2 Tbsp cumin
1 Tbsp smoked paprika
2 cloves garlic, finely minced
2 lbs ground beef or turkey
2 green peppers, finely diced
1 15-oz can black beans, rinsed, drained
2 15-oz cans tomato sauce
16 oz pkg elbow macaroni
2 cups shredded Cheddar/Jack cheese 
In a large pot, heat 2 Tbsp oil on medium high until hot. Add onions and spices, and cook 3-5 minutes until soft. Add peppers and garlic, and cook for a couple minutes more, or until the onions are starting to brown and the garlic is fragrant. Add ground beef. Break apart with a spoon and cook, stirring frequently, until all the meat is cooked through.

Add beans, tomato sauce, 4 cups water, and macaroni. Raise heat to high, and bring to a boil. Once boiling, reduce to a simmer and cook 8-12 minutes, or until the macaroni is cooked. Stir in cheese until melted.
