Mandarin Orange Chicken Salad

Salad:
3-4 cups shredded cabbage (or coleslaw mix)
3-4 cups chopped romaine lettuce
2 11-oz cans mandarin oranges, drained
3 cups cooked, chopped chicken
3 green onions, chopped
1 cup chow mein noodles
1 cup toasted, chopped almonds or cashews 
Dressing:
2 Tbsp soy sauce
3 Tbsp rice vinegar
1 tsp minced fresh ginger
2 Tbsp olive oil
1 tsp sesame oil
1-2 tsp chile-garlic sauce
1 clove garlic, finely minced
1 Tbsp honey
salt and pepper to taste
Dressing: Whisk together all ingredients and season to taste with salt and pepper. Set aside or refrigerate until ready to use (it can be made several days in advance and refrigerated).

In a large bowl, toss together all the salad ingredients except for the chow mein noodles. When ready to serve, pour the dressing over the salad and toss to combine - add the dressing gradually for personal amount. Sprinkle the chow mein noodles or almonds on top and serve immediately.
Notes
May also add 2-3 celery stalks, chopped small and 1 red bell pepper, chopped. 

Freeze 1-inch segments of unpeeled fresh ginger. When ready to use, grate on a microplane or a box grater. The chile-garlic sauce adds great flavor to the dressing - add more for a touch of heat and less just to enhance flavor. It is found in the Asian foods aisle at the grocery store.
