Lazy Daisy Cake

2 eggs
1 cup sugar
1 cup flour
1 tsp baking powder
1/2 tsp salt
1 Tbsp butter
1/2 cup milk, boiling
1 tsp vanilla
Coconut Topping
3 Tbsp butter, melted
2 Tbsp milk or cream
5 Tbsp brown sugar
1 1 1/2 cups coconut
1 1 1/2 cups walnuts or pecans, finely chopped
Beat eggs, add sugar and stir, then set aside. Sift flour, baking powder, and salt. Add dry ingredients to eggs. Place milk in saucepan and heat to boiling. Remove from heat, then add butter and stir until melted. Add vanilla, then stir into flour and egg mixture.

Pout into greased 13x9 cake pan. Bake at 350 for 35-40 minutes, until toothpick inserted in center comes out clean. Prepare Topping while cake is baking.

Coconut Topping  Boil butter, milk/cream, and brown sugar until smooth. Remove from heat, then pour over hot cake. Sprinkle with coconut and nuts. Turn over to broil, and return cake to oven for 5-7 minutes until coconut is lightly browned.
