Moist Chocolate Cake

3 cups flour
2 cups sugar
1/2 cup cocoa
1 tsp salt
2 tsp soda
1 cup oil
1 cup buttermilk (or 1 cup milk + 1 Tbsp vinegar, let sit 5 min.)
2 eggs
1 cup boiling water
Preparation: Preheat oven to 350. Grease and flour one 9x13 cake pan or 2 9" round cake pans. Place water in saucepan on stove to boil. If using milk + vinegar in place of buttermilk, pour both into cup and let sit 5 minutes until slightly thickened.

Measure dry ingredients into bowl and sift together three times. Add oil, buttermilk or sour milk, and eggs. Beat well with hand-held or stand mixer, then add boiling water. Beat 1 minute at medium speed. Pour into prepared pans and bake 30-35 minutes, until a toothpick inserted comes out clean. Cool in pans, then frost and decorate as desired. Cover cake with plastic wrap to prevent drying out.

This makes a fabulous cake for birthdays.
