Shauna's Quick Crescent Rolls

3 1/2 cups warm water
1 cup oil
3/4 cup sugar
6 Tbsp yeast
1 Tbsp salt
3 eggs
10 1/2 cups flour, as needed
melted butter
Mix water, oil, sugar, and yeast. Let sit 15 minutes for yeast to proof. Pour into large bowl or electric mixer. Add salt and eggs. Mix well. Add flour gradually, then mix with dough hook or knead by hand until dough is elastic.

Place dough onto floured surface. Divide into four equal parts. Roll first part into circle, about 1/4 inch thick. Spread with melted butter. With pizza cutter, cut into 12 equal (pie-shaped) triangles. Starting at wide end, roll each triangle into a crescent. Place onto greased cookie sheet. Repeat with remaining three dough portions. Let rest/raise 10-15 minutes.

Bake at 350 for 12-15 minutes until light golden brown. Remove from oven and brush with melted butter.
Notes
Dough may also be used for cinnamon rolls or fried bread scones.
