Baked Italian Meatballs

1 lb meatloaf mix (mixture of ground beef and pork)
⅓ cup Italian seasoned breadcrumbs
2 Tbsp grated Parmesan cheese
1 Tbsp finely minced yellow onion
1 clove garlic, minced
½ tsp dried parsley
2 eggs
salt and pepper, to taste
Preheat oven to 425°F. Line a baking sheet with parchment paper. In a large bowl, combine all ingredients and mix with hands until thoroughly combined. Shape into large meatballs (use a heaping large cookie scoop) and place on the baking sheet.

Bake 20 minutes. Turn meatballs over, reduce oven temperature to 300F and bake an additional 20 minutes. Place the meatballs in a simmering pot of sauce for at least 1 hour before serving.
