ZZ Chicken Tortilla Soup

1 large can cooked chiken, or 1 lb breast, diced
2 Tbsp olive oil
1/2 tsp salt
1/4 tsp  black pepper
1/2 yellow onion, finely chopped
3 garlic cloves, minced
1/4 cup minced cilantro
1 4-oz can diced green chiles
1 14 oz can diced tomatoes
1 14 oz can Northern beans, drained, rinsed
4 cups chicken broth, or 2 15-oz cans
1 Tbsp fresh lime juice
Warm oil in a large pot over medium heat. Add chicken, stir to coat and season with salt and pepper. Cook chicken, stirring as needed, 2-3 minutes until lightly browned on all sides. Add onion, garlic and pepper and cook 2-3 minutes until the onions turn clear.

Add the tomatoes, beans, chicken broth, cilantro and lime juice. Simmer 30 minutes. Scoop into bowls and serve with the toppings of choice. Season with additional salt and pepper, to taste. Toppings: tortilla chips, shredded cheese, diced avocado, lime wedges.
