Gingerbread Scones

2 cups flour
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ginger
3/4 tsp cinnamon
1/4 tsp ea cloves, nutmeg, cardamom
1/4 cup cold butter
1/3 cup molasses
1/4 cup milk
1 egg, separated
Icing Glaze
1/2 cup powdered sugar
2 tsp milk

Cream Cheese Glaze
2 ozs cream cheese
1 cup powdered sugar
1 1/2 tsp milk
1/2 tsp vanilla

Maple Glaze
2 Tbsp butter
1¼ cups powdered sugar
1 tsp vanilla
1 tbs. maple syrup
1-2 Tbsp water
Combine flour, brown sugar, baking powder, baking soda, salt, and spices. Cut in butter until mixture resembles coarse crumbs; set aside. Combine the molasses, milk and egg yolk until smooth; stir into the flour mixture just until moistened. Turn the dough onto a floured surface; knead gently 6-8 times.

Pat into an 8 inch circle; cut into 8 wedges and place 1 inch apart on a greased baking sheet. Beat egg white until frothy; brush over scones. Sprinkle with sugar. Bake at 400° for 12-15 minutes or until golden brown. Remove from pan to wire rack.
Notes
Optional: Add 3/4 cup currants or cranberries or white chocolate chips for texture and sweetness.
