Cinnamon Anise Granola

Source  Mel's Kitchen Cafe
Recipe Added:  1/21/2017
2 cup old-fashioned oats
2 cup Quaker Oatmeal Squares, Regular or Cinnamon Flavor
1/2 cup powdered milk
1 Tbsp cinnamon
1 Tbsp ground anise
1 cup chopped pecans
1 cup chopped other nuts (combo of cashews, peanuts, pepitas, pine nuts, etc.)
1/2 cup shredded, sweetened coconut
1/2 cup canola or vegetable oil
1/2 cup honey
1/4 tsp salt
Preheat oven to 250F. Position a rack in the upper third and a rack in the lower third (if you have convection bake, preheat oven to 225F). Line two large, rimmed baking sheets with parchment paper.

In a large bowl, toss together the old-fashioned oats, cereal, powdered milk, cinnamon, anise, salt, pecans, nuts, and coconut. Heat the oil and honey together until melted (but not boiling). Pour the oil/honey mixture over the dry ingredients and stir with spoon or hands until evenly coated.

Spread the granola into thin, even layers on the prepared pans. Bake 20 minutes. Stir/flip the granola and even it into a thin layer again on each baking sheet. Rotate the pans to bake on the opposite baking rack.

Bake another 20 minutes. Don't over bake. It may look slightly underdone but will harden as it cools. Cool granola completely. Break into pieces and store in an airtight container for several days.
