Neiman Marcus Cookies

2½ cups regular rolled oats
2 cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
12 ozs semisweet chocolate chips
4 oz milk chocolate, finely chopped
1½ cups chopped walnuts

5 cups oatmeal (process in blender)
2 cups butter
2 cups sugar
2 cups brown sugar
4 eggs
2 tsp vanilla
4 cups flour
1 tsp salt
2 tsp ea. baking powder, soda
24 oz bag milk chocolate chips
1 8-oz. plain Hershey bar, grated
3 cups walnuts or pecans, chopped
Preheat oven to 375F. Line baking sheet with parchment paper. Blend oats in a food processor or blender to fine powder. In a medium bowl, whisk blended oats with flour, baking powder, baking soda and salt; set aside.

In bowl of electric mixer, cream butter and sugars until light and fluffy, 3-4 minutes. Add eggs one at a time, beating after each addition. Beat in vanilla. Reduce speed to low and add flour mixture, beating just until incorporated. With a rubber spatula, fold in chocolate chips, grated chocolate and walnuts.

Roll dough into balls or use medium cookie scoop and place on baking sheets. Bake 10 minutes, until edges are set but center looks undone. Cool completely on baking sheets. Store cookies in airtight container at room temperature or frozen.

Advanced Preparation
Supposedly, a "pinch" more of baking powder makes a softer cookie. Also, once the oatmeal is processed in blender, measure or weigh again. Should be 202.5 g.
