Preheat oven to 375F. Grease an 8x8/9 casserole dish; set aside. In a large bowl, use a rubber spatula to mix together corn, muffin mix, sour cream, melted butter, and 1/2 cup cheese. Pour mixture into prepared casserole dish and spread into an even layer. Bake 45-55 minutes, or until top is golden brown and a toothpick inserted in center comes out with moist crumbs attached. Increase oven temperature to 400F and sprinkle top with remaining cheese. Return to oven and bake an additional 5-10 minutes, until cheese is melted and bubbly. Allow casserole to sit at least 5 minutes before serving. Leftovers can be stored in an airtight container in the refrigerator. |
