Candied Walnut Apple Salad

1 bag Spring Mix or Romaine or spinach
3/4 cup Craisins
2 crisp apples
lemon juice to toss apples in
1/2 cup Swiss cheese, cubed
1/2 cup chopped walnuts
1/4 cup sugar
Version Two:
1 pkg spinach
2 apples, diced
1 cup grated Swiss cheese
8 slices bacon, finely crumbled
1 cup blackberries, raisins, or Craisins
1/2 cup chopped peanuts, pecans, or slivered almonds
Wash and chop lettuce. Set aside to drain. Chop blue cheese or Gorgonzola finely - crumbles, not chunks. Chop apples and toss in juice. When ready to serve, toss lettuce, cranberries, walnuts, apples, and blue cheese in a large bowl. Add a vinaigrette dressing, if desired.

To candy the nuts, combine walnuts and sugar in a medium skillet over medium heat. Stir constantly. After a few minutes, sugar will look very fine and in a few minutes it will start to liquefy. Continue to scrape bottom of pan and stir contents. The syrup will begin to darken and coat the nuts. When they reach a golden brown color, remove from heat. Stir occasionally as the nuts begin to cool. Spread candied nuts onto wax paper and allow to cool completely.
