Pumpkin Snack Cake

3 cups + 2 Tbsp flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 Tbsp pumpkin pie spice
1/2 cup brown sugar
1 1/2 cups white sugar
1 cup vegetable oil
1/2 cup applesauce
2 tsp vanilla
1 15-oz can pumpkin
4 eggs
Cream Cheese Frosting
2 8-oz pkg cream cheese, softened
1/2 cup butter, softened
2 cups sifted powdered sugar
1 tsp vanilla
Preheat oven to 350. Grease and flour a 9×13 pan. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside. In a large mixing bowl, whisk together brown sugar, white sugar, oil, applesauce, and vanilla. Whisk in eggs and stir until combined completely.

Slowly add in flour mixture, beating until just combined. Pour into prepared pan and spread evenly. Bake 30-35 minutes or until a toothpick inserted comes out clean. Remove from oven and cool completely. Spread with Cream Cheese Frosting.

Cream Cheese Frosting  Whip together cream cheese, butter, and vanilla until light and fluffy. Add powdered sugar and whip until smooth and fully incorporated. Refrigerate any leftovers.

Notes
May also decorate with pumpkin candy decorations.
