Tamale Pie

2 lbs lean ground beef
1 medium yellow onion, diced
1 tsp salt
½ tsp black pepper
1 cup frozen corn kernels
½ cup sliced black olives (optional)
1 ½ cups salsa
2 Tbsp chili powder
1 Tbsp cumin   
1 can pinto beans, rinsed
1 cup shredded Cheddar cheese
Cornbread Topping
½ cup cornmeal
1 ½ cup flour
1/3 cup sugar
1 Tbsp baking powder
½ tsp salt
1/3 cup oil
2 eggs, beaten
1 ¼ cup milk
Preheat oven to 375. Lightly grease a 9x13 pan. Brown ground beef and onion, salt and pepper, over medium-high heat. Drain. Stir in spices, corn, salsa, olives, and beans. Pour mixture into pan and set aside.

Cornbread Topping  Combine cornmeal, flour, sugar, baking powder and salt in a medium bowl. Make a well in the center and add oil, eggs and milk. Whisk together until just moistened and no dry spots remain.

Sprinkle cheese over beef and pour cornbread batter over cheese and beef mixture. Gently spread the cornbread evenly to edges of pan. Bake 40-45 minutes until bubbly and a toothpick inserted into the cornbread comes out clean. Cool 10 minutes before serving.

Notes
Recipe may be halved and baked 30-35 minutes in a 9x9 square pan. Also may use a Jiffy cornbread mix for topping.
