Pumpkin Chocolate Chip Cookies

1 cup canned pumpkin 
1/2 cup sugar 
1/2 cup brown sugar 
1/2 cup vegetable oil
1 Tbsp vanilla 
1 egg 
2 cups flour 
2 tsp baking powder 
1/2 tsp salt 
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
1 tsp baking soda
1 tsp milk
2 cups semisweet chocolate chips
1 cup chopped walnuts
Preheat oven to 350°F. Line or spray large baking sheets. In a large bowl of mixer, combine pumpkin, sugars, oil, and vanilla and mix until smooth, 1-2 minutes. Add egg and mix again. In a medium bowl, whisk together flour, baking powder, salt, and spices. Dissolve baking soda with milk and stir in.

Add dry ingredients to batter and mix for just a couple seconds. With streaks of flour still remaining, add the chocolate chips and mix until combined. Drop cookie batter with cookie scoop onto baking sheets. Bake 10-12 minutes or until lightly brown and firm.
Notes
May use 1 T Pumpkin Pie Spice in place of cinnamon, nutmeg, ginger, and cloves.
