Melt butter over medium heat. Add onion and cook, until translucent, about 2-3 minutes. Add sausage and cook until browned, about 5 minutes. Pour off all but one spoonful of fat from pan. Add flour and stir constantly, 1-2 minutes. Gradually whisk in milk and combine well. Cook until the sauce is thick, about 4 minutes. Add cream cheese in pieces and stir to melt. Reduce heat to low and add Cheddar 1/4 cup at a time, stirring until melted before adding more. Add green chiles and salt. Serve warm in a bread bowl or with tortilla chips. |
