Sausage and Cheese Dip

1 Tbsp butter
1/2 cup minced yellow onion
8 oz sausage, cooked
2 Tbsp flour
1 1/2 cups milk
8 oz cream cheese, softened
1 1/2 cups Cheddar cheese, grated
1 small can diced green chiles
1/2 tsp salt
Quick Version
1 12-oz. pkg ground sausage
1 8-oz. pkg cream cheese
1 cup salsa

Melt butter over medium heat. Add onion and cook, until translucent, about 2-3 minutes. Add sausage and cook until browned, about 5 minutes. Pour off all but one spoonful of fat from pan. Add flour and stir constantly, 1-2 minutes. Gradually whisk in milk and combine well. Cook until the sauce is thick, about 4 minutes.

Add cream cheese in pieces and stir to melt. Reduce heat to low and add Cheddar 1/4 cup at a time, stirring until melted before adding more. Add green chiles and salt. Serve warm in a bread bowl or with tortilla chips.
