Chocolate Toffee Shortbread Bars

1 1/2 cups flour
1/2 tsp salt
1/4 tsp cinnamon
2 sticks butter, softened
1/2 cup brown sugar
1/4 cup sugar
1 tsp vanilla
1/2 cup milk chocolate, chopped
Topping
1 cup milk chocolate, chopped
1 1/2 cups toffee bits (or 4-6 Heath bars, chopped)
Preheat oven to 375. Whisk flour, salt, and cinnamon, set aside. Place butter in stand mixer. Beat 3 minutes until smooth. Add sugars and beat 3 minutes. Add vanilla and mix briefly. Add flour mixture to butter/sugar mixture. Beat in gradually. Mix until flour is incorporated. Add 3 oz chocolate and mix until dry ingredients are incorporated. Do not overmix. Line 9x13 pan with foil, leaving long foil ends on side. Lightly grease foil.

Press dough into pan. Bake crust 18-20 minutes until bubbling. Remove from oven and cool. Sprinkle 6 oz chocolate over hot bars and cover with foil to let chocolate melt. Let sit 5 minutes. Using an offset spatula, spread softened chocolate over crust.

Sprinkle toffee pieces over chocolate and press down gently. Cool bars to soften. If chocolate is not set, put   pan in freezer about 10 minutes. Using long edges of foil, lift out and cut into bars.
