ZZ Congo Bars

1 1/3 cups flour
1¼ tsp baking powder
¼ tsp salt
¾ stick butter, melted, cooled
1¼ cups brown sugar
1 large egg
1 large egg white (save egg yolk)
1 tsp vanilla
1 cup chopped walnuts

Ganache: 3 oz semisweet chocolate, chopped, 3 Tbsp heavy cream

Brownie Layer:
1 cup + 2 Tbsp flour
¼ cup cocoa
1/8 tsp baking powder
¼ tsp salt
1 stick butter
4 oz semisweet chocolate, chopped
3/4 cups sugar
2 large eggs, lightly beaten
1 large egg yolk
2 tsp vanilla
Center an oven rack and preheat to 350F Line a 9x13 pan with foil and lightly grease and flour Stir together flour, baking powder, and salt In a large bowl, stir butter, brown sugar, egg, egg white, and vanilla just until blended Stir in the flour mixture just until the batter is smooth Scoop the batter into prepared pan and spread Sprinkle on walnuts and press into the batter Bake 12 minutes until set Transfer the pan to a wire rack to cool

Stir together flour, cocoa powder, baking powder, and salt In a small saucepan, melt the butter and chocolate over low heat, stirring until smooth Transfer to a medium bowl and cool 5 minutes Stir the sugar into the chocolate mixture until mixed Add the eggs, egg yolk, and vanilla and stir until blended Stir in the flour mixture just until the batter is smooth Scoop the batter onto 8 or 9 different areas of the baked layer Spread batter evenly and bake 20 minutes Cool completely The top layer will set up as it cools

Ganache: Place the chocolate in a medium bowl In a small saucepan, bring the cream just to a boil over medium heat. Pour the cream over the chocolate and let stand for 30 seconds. Whisk together until smooth. Set aside to cool. Pour glaze into Ziploc bag. Snip corner and squeeze to lightly pipe thin lines of chocolate in a zigzag pattern over the cooled surface. Let set, 1 to 1½ hours.
