Cheese Rolls with Parmesan Crust

4 1/2 tsp instant yeast
1/2 cup warm water
1 cup lukewarm milk
1 large egg, lightly beaten
1/4 cup butter, softened
1/3 cup sugar
1 tsp salt
5-6 cups flour
Cheese Filling
1 cup Pepper Jack cheese, cubed 

Parmesan Topping
2 Tbsp butter
1/4 cup Italian-flavored crumbs
1/4 cup grated Parmesan cheese
1 egg yolk beaten + 1 Tbsp water
Combine dough ingredients and mix and knead until dough is soft and elastic dough. Place dough in a lightly greased bowl and cover, letting rise in a warm place for 20-30 minutes.

Lightly grease bottom and sides of 9x13 pan with butter or cooking spray. Divide dough into 15 pieces and shape into rounds. Punch a cube of cheese from bottom up into center of each piece. 1/4 tspdough tightly to close bottom. Place rolls, pinched side down, in baking pan. Cover and let rise 15 to 20 minutes, or until doubled.

While rolls are rising, melt butter and stir in bread crumbs and Parmesan cheese. Set aside. Preheat oven to 375F. When rolls have risen, brush tops with egg yolk beaten with water. Sprinkle tops of rolls liberally with bread crumb mixture. Bake 15 to 18 minutes, until tops are browned. Remove from pan and cool on a rack. Serve warm.
