Oatmeal Pancake Mix

3 1/2 cups quick oats
3 cups whole wheat flour
2 cups flour
3 Tbsp sugar
3 Tbsp baking powder
1 Tbsp salt
1 Tbsp baking soda
1 cup vegetable or vegetable oil
Mix dry ingredients in mixer with paddle. With mixer on slow, drizzle vegetable oil into bowl. Stop mixer and squeeze a clump of mix in your hand. If it stays together, it is just right. If it is still crumbly, add a Tbsp oil at a time until consistency is correct. Store in airtight container for two weeks softened or indefinitely in refrigerator or freezer.

To Use Mix  Whisk together 1 cup of mix, 1 cup buttermilk, and 1 egg. Heat a griddle and drop batter onto it. The mixture may seem thin at first but  oats will soak up milk while griddle preheats. When the edges look dry and bubbles come to surface and don’t break, turn pancake over to finish cooking on second side.

1 cup of mix makes about 6-7 4-inch pancakes
