Candied Coconut Sweet Potatoes

1 29-oz can sweet potatoes, drained
3 Tbsp sugar
3 Tbsp butter, very soft 
1 egg, beaten
1/3 cup sweetened condensed milk
1/2 tsp vanilla

Topping {May Double}
1/2 cup brown sugar
1/2 cup sweetened coconut flakes
3 Tbsp butter, melted

In a large mixing bowl, add sweet potatoes, sugar, butter, eggs, sweetened condensed milk, and vanilla. Mix with an electric mixer just until everything is incorporated. Spread mixture evenly into a 9x9 pan.

Topping: Combine brown sugar and coconut and then pour melted butter over. Bake at 350 for 40-50 minutes until top is browned and bubbly.
Notes
This can be made up to a day or two ahead of time; just keep pan well covered in the fridge and don’t put the topping on until just before baking.
