Preheat oven to 250. Line a baking sheet with foil and lightly spray. In a large bowl, beat egg white until stiff peaks form. Add water and vanilla and beat again until stiff. Add nuts and stir gently to coat. In a small bowl, mix sugars, salt and cinnamon. Add to nuts and mix well. Spread nuts evenly onto baking sheet. Bake 1 hour, stirring every 15 minutes. When done, the coating should feel hard and crunchy. Cool completely before serving or storing.
Version Two: Melt butter over medium-low heat. Stir in spices and pecans. Toast nuts 5-7 minutes, stirring often, until color deepens slightly. Transfer nuts to a bowl and toss with sugar. Cool completely. May eat as snack or add to salads. |
