Chocolate Truffle Cookies

1 1/4 cups butter, softened
2 cups powdered sugar
1/3 cup cocoa powder
1/4 tsp salt
1/4 cup sour cream
1 tsp vanilla
2 1/4 cups flour
2 cups semisweet chocolate chips
1/3 cup cocoa powder (for rolling)
2/3 cup powdered sugar (for rolling)
Preheat oven to 325 degrees. Spray or line two baking sheets. In a large bowl, cream butter and powdered sugar, adding sugar in slowly. In a fine mesh strainer/sieve, place tcocoa powder and salt ,and sift into butter/sugar and mix until well combined.

Beat in sour cream and vanilla. With mixer on low, blend in flour until no streaks remain. Stir in chocolate chips. If dough is hard to handle, refrigerate 30-60 minutes before rolling.

Shape dough into 1-inch balls and roll lightly in cocoa powder and place on baking sheet. Do not flatten cookies. Bake 10 minutes until barely set but not dry. Cool on baking sheet 3-5 minutes and transfer to rack to cool. When cookies have softened, after 30-45 minutes, roll in powdered sugar until coated. Store in an airtight container.
