Preheat oven to 350. Put oatmeal 1/2 cup at a time into food processor or blender for about 30 seconds until coarse. Place in bowl with next four dry ingredients and set aside. In a large bowl, beat butter for 30 seconds until light in color. Add sugar, eggs, and vanilla. Mix then add dry ingredients, then add coconut and chocolate chips. Shape cookie dough into balls and place on cookie sheet. Bake 12-13 minutes. Cool slightly before removing from the pan to a wire rack. Makes about 2 dozen cookies. |

Notes One of my very favorite cookie recipes. From Diane and Carolee: substitute 1/2 cup mashed banana for 1/2 cup butter and/or 1 cup chocolate chips for 1 cup coconut.
