Double Chocolate Cookies

Recipe Added:  11/28/2011
2 cups flour
½ cup baking cocoa
2 tsp baking powder
½ tsp salt
1 cup chocolate bar, chopped
2 tsp vanilla
4 large eggs
1 ¼ sticks butter, softened
1 ½ cups brown sugar
½ cup sugar
1 ½ cups semisweet chocolate chips
Whisk flour, cocoa, baking powder, and salt; set aside. Melt chocolate in microwave. In a small bowl, beat eggs and vanilla, set aside. With mixer, beat butter at medium speed until smooth, about 5 seconds. Add sugars until combined. Reduce speed to low and gradually beat in egg mixture until blended.

Add chocolate in a steady stream and beat until combined. On low speed, add dry ingredients and mix until just combined. Add chocolate chips. Do not over beat. Cover with plastic wrap and let stand until batter is fudge-like, about 30 minutes.

Preheat oven to 350. Roll dough into 1 ½ inch balls and place on lined cookie sheets. Bake 10-11 minutes until set. Cool on pan 5 minutes then transfer to a cooling rack.
