Preheat oven to 350F. Spray a 10-inch round or tart pan. In bowl, cream butter and sugar until smooth. Mix in egg, vanilla, and 1/2 lemon zest. Add dry ingredients and mix until just blended. Press dough into pan. Bake 10-12 minutes, or until lightly browned. Don’t overbake. Cool on a wire rack.
Frosting In a medium bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, lemon juice, and other half of lemon zest. Spread on cooled pizza crust to within 1/4-inch of edges. Arrange fruit on top. Cover with plastic wrap and chill until serving. |
