Strawberry Tart

1/2 cup butter, softened
2/3 cup sugar
1 large egg
1 tsp vanilla
Zest of 1 lemon, divided
1 1/4 cups flour
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
Frosting
1 8 oz pkg cream cheese, softened
2 Tbsp sugar
1/2 cup powdered sugar
1 tsp vanilla
1-2 Tbsp lemon juice
Other half of lemon zest
Fresh Fruit
Strawberries, Raspberries Blueberries, Pineapple, Peaches, Kiwi
Preheat oven to 350F. Spray a 10-inch round or tart pan. In bowl, cream butter and sugar until smooth. Mix in egg, vanilla, and 1/2 lemon zest. Add dry ingredients and mix until just blended. Press dough into pan. Bake 10-12 minutes, or until lightly browned. Don’t overbake. Cool on a wire rack.

Frosting  In a medium bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, lemon juice, and other half of lemon zest. Spread on cooled pizza crust to within 1/4-inch of edges. Arrange fruit on top. Cover with plastic wrap and chill until serving.
