Chicken Fried Steak with Gravy

1½ lbs cube steak
1½ cups flour
1 tsp seasoned salt
1 tsp black pepper
½ tsp cayenne pepper
3 eggs
½ cup buttermilk
Sausage Gravy
¼ lb breakfast sausage
2 Tbsp flour
1½ cups milk
salt and black pepper, to taste
Sprinkle cube steak with salt and pepper. Whisk together flour, salt, pepper, and cayenne pepper in shallow bowl. In another bowl, whisk together eggs and buttermilk. Dip each piece of meat in egg mixture then place in seasoned flour. Turn to coat thoroughly. Dip again in egg mixture then return to flour mixture, coating evenly on both sides. Repeat with remaining meat.

In a large skillet, heat ½ inch vegetable oil over medium-high heat until a fleck of flour dropped in the pan sizzles. Place 1-2 pieces of meat (or more but do not crowd) into the skillet. Cook 3-4 minutes, or until the blood starts bubbling out of the top. Using tongs, gently turn over and cook 5 more minutes. Place cooked steaks in a 200-degree oven to keep warm while other steaks are frying. Serve with Sausage Gravy.

Sausage Gravy Brown and crumble sausage in a skillet over medium heat. Remove sausage from skillet and place on a plate. Drain oil from pan, reserving 2 Tbsp in the skillet. Sprinkle flour over drippings, and whisk together, cooking about 2 minutes, until a dark roux is formed. Add milk slowly to skillet, whisking continuously. Reduce heat to medium-low and continue whisking until thickened, about 2 minutes. Remove from heat, stir in sausage, and season to taste with salt and pepper. May thin with milk to taste.
