Caramel Popcorn

12 cups popped popcorn (1/2 cup kernels)
1 cup peanuts (optional)
1 cup brown sugar
1/4 cup light corn syrup
1/2 cup butter
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp of salt
1/2 tsp cinnamon
Preheat oven to 250. Combine popcorn and nuts, set aside. Mix butter, corn syrup and brown sugar to a small bowl. Microwave 30 seconds and then stir. Microwave for 2 more minutes and stir. Repeat. The mixture should be hot and bubbly. Add vanilla, baking soda, and cinnamon. Stir and then pour over popcorn. Mix well. Break apart and eat.
