Blueberry Streusel Muffins

1 3/4 cup flour
2 3/4 tsp baking powder
3/4 tsp table salt
1/2 cup sugar
2 tsp lemon zest
1 large egg
3/4 cup buttermilk
1/3 cup vegetable oil
1 cup fresh or frozen blueberries
1 Tbsp each flour, sugar
Streusel Topping
1/4 cup sugar
2 1/2 Tbsp flour
1/2 tsp cinnamon
1 1/2 Tbsp butter
Preheat oven to 400F. Lightly spoon flour into 1 1/2 measuring cups and level with a knife. Combine in large bowl with the baking powder, salt, sugar, and lemon zest. Make a well in the center. In a smaller bowl, whisk egg, buttermilk, and oil. Add to dry ingredients, stirring just until moistened. In a small bowl, combine remaining 1/4 cup flour and sugar and toss blueberries in to coat. Gently fold blueberry mixture into batter. Spoon batter into lined muffin tins, filling 2/3 full.

Streusel Topping combine sugar, flour, and cinnamon. Cut in butter with a pastry cutter until crumbly. Sprinkle over batter and bake 15-18 minutes until tops are golden and a toothpick inserted comes out clean. Remove from oven and cool in pan 5 minutes and then transfer to a cooling rack. Makes 12 muffins.
