Coconut Banana Bread with Lemon Glaze

2 cups flour
3/4 tsp baking soda
1/2 tsp salt
1 cup sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed ripe bananas
1/4 cup sour cream
3 Tbsp apple juice or milk
1 tsp vanilla
1/2 cup + 2 Tbsp coconut
Topping
1/2 cup powdered sugar
1 1/2 Tbsp lemon juice
Preheat oven to 350. Spray a 9×5″ loaf pan. Whisk flour, baking soda, and salt together and set aside. In mixing bowl, beat butter and sugar until blended. Add eggs and mix well. Add bananas, sour cream, apple juice, and vanilla. Beat until blended. Add flour mixture and beat at a low speed until just combined. Stir in 1/2 cup coconut. Pour into prepared pan. Sprinkle 2 Tbsp coconut on top.

Bake about 50-60 minutes or until a knife inserted comes out clean. Check after 45 minutes. If the top has browned and the coconut is looking toasted, cover bread lightly with foil. Remove pan from oven when done and cool 10 minutes then remove from pan. Whisk powdered sugar and lemon juice together and drizzle over top. Cool completely before slicing.

Notes
May also use 4 mini loaf pans - bake 30-35 minutes. Bread is very soft and moist. Delicious!
