ZZ Chocolate Sandwich Cookies

1 devil’s food cake mix
1/2 cup shortening (or 1/3 cup oil?)
2 eggs
Marshmallow Buttercream Frosting:
1 jar marshmallow creme
1 cup butter, softened
2 cups powdered sugar
1 tsp vanilla
1/3 cup crushed peppermint candies
Preheat oven to 350. Combine cake mix, oil and eggs. The dough will be VERY stiff. Drop onto cookie sheet and bake 5-7 minutes. Cool completely on the cookie sheet instead of transferring them to a wire rack. May use ice cream of choice or frosting.

Marshmallow Buttercream Frosting: In large bowl, beat marshmallow creme and butter with electric mixer on medium speed until smooth. Beat in powdered sugar and vanilla until smooth. Spoon 2 Tbsp frosting onto each of half of the cookies; top with remaining cookies. Roll edges of cookies in crushed peppermint candies.

Spoon ice cream onto bottom of one cookie. Top with another cookie, press together gently, and freeze immediately.

Notes
May vary flavors of cake mix and ice cream or frosting: spice cake mix for fall, or roll in toffee candy bars in place of peppermint.
