Preheat oven to 350. Combine cake mix, oil and eggs. The dough will be VERY stiff. Drop onto cookie sheet and bake 5-7 minutes. Cool completely on the cookie sheet instead of transferring them to a wire rack. May use ice cream of choice or frosting.
Marshmallow Buttercream Frosting: In large bowl, beat marshmallow creme and butter with electric mixer on medium speed until smooth. Beat in powdered sugar and vanilla until smooth. Spoon 2 Tbsp frosting onto each of half of the cookies; top with remaining cookies. Roll edges of cookies in crushed peppermint candies. Spoon ice cream onto bottom of one cookie. Top with another cookie, press together gently, and freeze immediately. |
