Dutch Apple Pie

Filling
4 cups Granny Smith apples, peeled
1/3 cup sugar
1 1/2 tsp cornstarch
1/8 tsp salt
1/4 cup water
1/2 tsp vanilla
Crust
2 cups flour
2/3 cup brown sugar
1/2 cup regular oats
1/2 tsp salt
1/3 cup chopped pecans
3/4 cup butter, melted
Preheat oven to 350F. Combine all crust ingredients in a medium bowl and mix well. Pack 1 cup mixture into a measuring cup and set aside; gently press remaining mixture into a 9″ pie plate.

Slice apples very thin or roughly chop into large chunks. In a saucepan, combine sugar, cornstarch, salt, water, and vanilla and bring to a boil. While mixture is heating, place apples in pie crust. Pour boiling sugar/water mixture over apples.

Sprinkle reserved crumb topping over apples and place pie plate on baking sheet. Bake 43-45 minutes. In last 15 minutes, cover pie with aluminum foil to keep from getting too brown.

Notes
May drizzle powdered sugar glaze over top.
