Banana Nut Muffins

1/2 cup butter, melted,  cooled 
2/3 cup brown sugar
2 large eggs
2 cups bananas, mashed (about 3-4)
2 tsp vanilla
1 3/4 cups flour
1 tsp baking soda
1/4 tsp salt
1/4-1/2 tsp cinnamon
1/2 cup nuts chopped (walnuts, pecans, hazelnuts, macadamia)
Topping
1/4 cup brown sugar
2-3 Tbsp chopped walnuts
Preheat oven to 350°F. In a large bowl, whisk melted butter and ⅔ cup brown sugar until well combined, about 1 minute. Add eggs, mashed banana and vanilla, whisking until combined. In a separate bowl, combine flour, baking soda, salt, and cinnamon. Add dry ingredients to wet and with rubber spatula lightly stir batter until almost combined.

Add ˝ cup walnuts and stir until no streaks of flour remain. Do not over-mix. Grease 15 standard-sized muffin cups and divide batter evenly among cups. Sprinkle top of each cup with Topping. Bake 14-17 minutes, until a toothpick inserted into center comes out clean. Place pan on a wire rack to cool.
