Cinnamon Roasted Almonds

1 cup brown sugar
1/4 cup water
1 Tbsp cinnamon
1/8 tsp salt
2 cups almonds
Alternate Version
1 egg white
1 tsp cold water
2 cups whole almonds
3 Tbsp white sugar
3 Tbsp brown sugar
1 Tbsp cinnamon
1/4 tsp salt
Preheat oven to 350º. Combine brown sugar, water, cinnamon and salt in a saute pan. Bring to a boil over medium heat. Add almonds and cook, stirring constantly, until the liquid evaporates and leaves a candy coating on the almonds. Pour onto a baking sheet lined with parchment or a Silpat. Spread to a thin layer, separating the almonds if necessary. Bake 10 minutes. Remove from oven and let cool completely. Store in an airtight container.

Alternate Version Preheat oven to 250. Beat egg white and water until frothy. Add almonds and stir until coated. Mix sugars, salt, and cinnamon, and sprinkle over nuts. Stir until well coated. Spread almonds evenly on a sprayed or lined baking sheet. Roast almonds 1 hour, stirring every 20 minutes. Cool, then store in airtight containers.
