Strawberry Spinach Salad

1 10-oz. bag fresh baby spinach
1 medium cucumber, seeded, sliced
1 pint strawberries, sliced
1 cup sliced almonds, toasted
1/2 lb grilled chicken breasts, sliced or diced (optional)
 Lemon Poppy Seed Dressing
1/3 cup lemon juice, 1 tsp zest (2-3 lemons)
1/4 cup rice wine vinegar
1/4 cup canola oil
3/4 tsp salt
1/4 tsp black pepper
1/4 cup sugar
2 tsp poppy seeds
1 tsp grated onion
1 clove finely chopped garlic
Toss ingredients together and serve immediately. May also arrange salad on individual plates for serving.

Lemon Poppy Seed Dressing  Place all ingredients in container with lid and shake vigorously. Refrigerate at least an hour. Shake well before serving.
