In a large saucepan, combine milk, oil, and sugar. Heat until hot but not boiling, then remove from heat and cool until mixture is warm to the touch but not hot. Sprinkle yeast over surface of the liquid and allow to sit 5 minutes. Stir in pumpkin until combined. Combine 4 cups flour with cinnamon, nutmeg, and ginger. Sprinkle it into the saucepan and stir until it just comes together. Cover saucepan with a dish towel and set in a warm, draft-free place for 1 hour. After 1 hour, dough should be puffy and doubled in size. Stir in 1/2 cup flour, baking soda, baking powder, and salt until totally combined.
Preheat oven to 375. Drizzle butter into 3 pie pans (or large baking dish) and spread on bottom. Turn dough onto floured surface and press into a rectangular shape. If too sticky, sprinkle with flour until it's easier to handle. Sprinkle flour on rolling pin and roll dough into a large rectangle about 10x30 inches. Drizzle melted stick of butter over dough and smear over the surface. Filling Mix sugar, brown sugar, cinnamon, nutmeg, and ginger. Sprinkle over dough, covering all butter. Sprinkle with 1/2-3/4 cup chopped pecans. Roll dough tightly into a large log. 1/4 tsp seam closed and turn roll over so that seam is facing down. With sharp knife or dental floss, cut into slices and place in buttered pan(s). Let rise 20 minutes, then bake 15-18 minutes or until golden brown. While rolls are baking, make Cream Cheese Glaze by combining all ingredients in bowl. Beat with a mixer until fluffy, adding more milk to thin, if necessary. Frost rolls as soon as they come out of the oven. Sprinkle extra nuts over the frosting, then cool 15 minutes before serving. |

Advanced Preparation Prepare the rolls to where you roll and place in the pan. Then, cover in plastic wrap and refrigerate overnight. In the morning, remove the pan from the fridge and proceed with the instructions. Rising time may be slightly longer than noted in the recipe due to the dough being cold vs room temp. | |||||
