Great American Potato Salad

Dressing
1 cup mayonnaise
2 Tbsp yellow mustard
1 tsp celery seed
1 tsp salt
1 tsp dill
1/4 tsp pepper
5-lb bag potatoes, cooked, diced
4-5 hard-cooked eggs, chopped
2 small onions, finely diced
4 stalks celery, sliced
2/3 cup dill pickle relish
Mix Dressing ingredients in large bowl. Add remaining ingredients; mix lightly. Refrigerate several hours to chill before serving. Makes a large bowl.

Advanced Preparation
How to Boil Potatoes  Peel then dice potatoes and place in boiling, salted water. Boil 12-15-18 minutes, depending on size of pieces. To ensure boiled potatoes stay firm but tender, drain cooked potatoes and then plunge them immediately into ice water. The cold shock halts the cooking process and helps the boiled potatoes retain their texture.
