Apple Nut Bread

4 large apples, peeled, shredded
2 cups sugar
½ cup oil
2 large eggs
2 tsp vanilla
1 cup chopped pecans or walnuts
1 cup raisins, Craisins, or dates
3 cups flour
1 Tbsp baking powder, cinnamon
½ tsp baking soda, nutmeg
1 tsp salt
Version Two
1 1/2 cups applesauce
1 egg
1 cup sugar
2 Tbsp butter, softened
1 tsp vanilla
2 cups flour
2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp cloves, nutmeg
1 cup raisins
1 cup chopped walnuts
Preheat oven to 350°. Grease and flour two loaf pans. Set aside. Using large holes of grater, shred the apples. Mix apples and sugar in large bowl and let sit for 15 minutes until sugar dissolves. There will be alot of liquid. Add next five ingredients (oil through raisins) and stir to mix well. In a medium bowl, whisk together the remaining six dry ingredients. Stir dry ingredients into the apple mixture, just until mixed. Pour into the loaf pans. Bake 50 to 55 minutes, until center tests done with a toothpick. Cool 10 minutes in pan and then turn out onto rack to cool completely.

Version Two In a mixing bowl, combine the first five ingredients. Combine flour, baking soda, cinnamon, cloves and nutmeg. Add to applesauce mixture; mix well. Stir in the raisins and walnuts. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 350 degrees F for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
