Pine Nut Chicken Salad

Chicken Salad
8 cups torn salad greens
1 1 1/2 cup chicken breast, diced
2 cups halved seedless red grapes
1 red pepper, cut into strips
2 green onions, chopped
1/3 cup pine nuts
3/4 cup Poppy Seed Dressing
Poppy Seed Dressing
1/3 cup sugar 
1/3 cup white vinegar 
1/3 cup olive or vegetable oil 
2 Tbsp yellow mustard 
3/4 tsp salt 
1 tsp poppy seeds
Combine all ingredients except dressing in large bowl. Add dressing just before serving; toss to coat.

Poppy Seed Dressing  Combine all ingredients except the poppy seeds in a blender and process until combined. Add the poppy seeds and give it another whirl to combine. Pour in a jar and keep in the refrigerator until ready to serve.
