Preheat oven to 400. In a medium bowl, combine the spices and the olive oil. Toss the chickpeas in the spice mixture and spread over a lined baking sheet. Bake 20 minutes and remove pan from oven. Use a spatula to toss the chickpeas, then replace the pan and cook for another 15-20 minutes or until browned (but not burned) and crispy. Allow to cool.
Sweet Version: Whisk oil, cinnamon, and sugar. Add chickpeas and stir until evenly coated. Spread on baking sheet and bake 35-40 minutes, or until are crunchy and no longer soft in the middle. Place hot chickpeas in a bowl and coat evenly with honey. Spread chickpeas again on baking sheet and allow to dry. Store in an airtight container room temperature. |
