BBQ Pulled Beef

Meat
4 lb boneless chuck roast
4 cups water
1 onion, chopped
2 bay leaves
1 Tbsp beef boullion
Sauce
2 Tbsp butter
1/2 cup onion, diced
2 Tbsp brown sugar
1/2 tsp salt
1/2 tsp dry mustard
1 cup ketchup
2 Tbsp white vinegar
2 Tbsp Worchestershire sauce
Place Meat ingredients in crock pot. Simmer 3-4 hours on high, 6-7 hours on low until tender. Remove meat and reserve 1 cup broth. Discard onion and bay leaf. Pull and shred beef. Set aside while sauce is prepared.

Sauce Melt butter in a saucepan. Add diced onion and cook until tender. Stir in remaining sauce ingredients. Add shredded beef and simmer at least 30 minutes. Serve in rolls for sandwiches, enchiladas, or burritos.
