ZZ Chicken Salad Sandwich COMBINE W Farmer

2 cups B & S chicken, chopped
2 stalks celery, finely chopped
3 green onions, finely chopped
1/2-1 cup mayonnaise
1 tsp Dijon mustard
½ tsp salt
1/8 tsp pepper
1/2 tsp basil
Craisins
pecans or walnuts, chopped
red grapes, halved
Version Two:
1/2 cup mayonnaise
2 Tbsp Dijon mustard
1/4 tsp pepper
2 cups cubed cooked chicken
1 cup shredded Swiss cheese
1/2 cup chopped celery
1/2 cup dried cranberries
1/4 cup chopped walnuts
1/2 tsp dried parsley flakes
Place chopped chicken in a bowl with celery and green onions. Add mayo (1/2 cup to start), mustard, salt, and pepper. Stir until well combined. Add more mayo as needed. Just before serving, stir in Craisins, nuts, and grapes. Serve on rolls or croissants with a leaf of fresh green lettuce. Store covered in refrigerator up to 3 days.
Notes
May use rotisserie chicken.
