Pumpkin Spice Streusel Muffins

2 1/2 cups flour
1/2 cup rolled oats
4 tsp pumpkin pie spice
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 15-oz can pumpkin
1 cup brown sugar
1 cup white sugar
2/3 cup vegetable oil
1/2 cup applesauce
3 eggs
1 tsp vanilla
1/2 cup golden raisins (optional)

Streusel Topping
1/2 cup brown sugar
4 Tbsp butter, softened
4 Tbsp ea rolled oats, flour

Preheat oven to 350 degrees F. Grease or line 24 muffin cups with paper liners. Combine flour, oats, pumpkin pie spice, baking soda, baking powder, and salt together in a bowl. Whisk pumpkin puree, brown sugar, white sugar, oil, applesauce, eggs, and vanilla in a separate bowl. Stir flour mixture into pumpkin mixture; mix well. Fold in raisins. Pour batter into prepared muffin tin. Sprinkle each muffin with streusel topping. Bake 25-35 minutes, until a toothpick inserted in center comes out clean.

Streusel Topping Mix flour and sugar, mix in butter with a fork, and mix in oats until streusel topping is crumbly.

Streusel Variation 1 cup oats, 1 Tbsp flour, 1/3 cup brown sugar, 1 tsp cinnamon, 1/4 tsp pumpkin pie spice, 1/4 tsp nutmeg, 6 Tbsp cold butter, cubed, 1/4 cup chopped pecans
