Banana Oatmeal Cookies {Best}

1/2 cup butter
1/2 cup  shortening
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla 
1 3.4 oz box instant banana pudding
1 banana, mashed
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups rolled oats

Add-Ins {Optional}
1 cup chopped nuts
1 cup raisins or dates
1 cup finely chopped, peeled apples
1 cup chocolate chips: semi, milk, white, mini, butterscotch
1 cup coconut
Preheat oven to 350°. In a large bowl or mixer, cream together butter, shortening, and sugars. Beat for 2-3 minutes. Add eggs and vanilla and beat for another 1-2 minutes. Add pudding mix and banana and mix again.

In a separate bowl, combine flour, baking soda, cinnamon and salt. Add this mixture to the wet ingredients and mix just until combined. Add oatmeal (See Note for add-ins.) and stir in with a spoon, just until barely combined.

Drop by rounded spoonfuls or cookie/ice cream scoop onto prepared cookie sheets. Bake 9-11 minutes or until the edges just barely begin to turn a light golden brown. Don't overbake.
Notes
If using a combination of add-ins (nuts + chips OR nuts + fruit), mix with oatmeal in medium bowl, then add to rest of cookie dough. For very large cookies, use an ice cream scoop and bake 15 min. Cool on pan several minutes before moving to rack.

These cookies are soft and delicious!
