Oatmeal Craisin Cookies

1/2 cup butter
1/2 cup  shortening
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla 
1 3.4 oz box instant vanilla pudding mix
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
3 cups rolled oats
1 ˝ cups Craisins

Add-Ins {Optional}
1 cup chopped Macadamia nuts
1 cup white chocolate chips
1 cup coconut
Preheat oven to 350°. In a large bowl or mixer, cream together butter, shortening, and sugars, eggs, and vanilla. Beat for 2-3 minutes. Add pudding mix and mix again.

In a separate bowl, combine flour, baking soda, and salt. Add this mixture to the wet ingredients and mix just until combined. Add oatmeal and Craisins (See Note for add-ins.) and stir in with a spoon, just until barely combined.

Drop by rounded spoonfuls or cookie/ice cream scoop onto prepared cookie sheets. Bake 9-11 minutes or until the edges just barely begin to turn a light golden brown. Don't overbake.
Notes
I added Macadamia nuts, white chips, and coconut. These cookies are soft and delicious.
